In a mixing bowl, whisk eggs with milk, salt, and pepper. Melt butter in a nonstick skillet over medium-low heat. Pour in egg mixture and gently scramble until just set but still creamy.

Spread warm sausage gravy evenly over the baked crust. Add scrambled eggs on top, then sprinkle cheddar and pepper Jack cheeses to cover.
