# What You’ll Need:

→ Yogurt Base

01 - 1 cup low-fat plain Greek yogurt
02 - 1/4 cup pumpkin purée
03 - 2 to 3 tablespoons maple syrup
04 - 1 1/2 teaspoons pumpkin pie spice
05 - 1/2 teaspoon pure vanilla extract
06 - A pinch of fine sea salt

→ Pumpkin Pie Crumble

07 - 1/2 cup rolled oats
08 - 1/4 cup raw pecans or walnuts, roughly chopped
09 - 1 tablespoon maple syrup or brown sugar
10 - 1 tablespoon melted coconut oil or unsalted butter
11 - 1/2 teaspoon ground cinnamon
12 - A pinch of fine sea salt

# Step-by-Step Guide:

01 - In a medium bowl, combine Greek yogurt, pumpkin purée, maple syrup, pumpkin pie spice, vanilla extract, and sea salt. Whisk until smooth and uniform in color. Taste and adjust sweetness or spice as preferred. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
02 - In a dry skillet over medium-low heat, combine rolled oats and chopped nuts. Drizzle maple syrup (or brown sugar) and melted coconut oil (or butter). Add ground cinnamon and sea salt. Stir continuously for 5 to 8 minutes until mixture is golden and crisp. Transfer to a plate to cool completely.
03 - Spoon chilled yogurt base into a serving bowl. Top generously with cooled crumble. Layer additional yogurt and crumble if desired. Optionally garnish with extra pumpkin pie spice, maple syrup drizzle, toasted pepitas, dried cranberries or dates, or fresh sliced fruit. Serve immediately.

# Handy Tips:

01 - Chilling the yogurt base enhances flavor integration. Cooling the crumble fully preserves its crisp texture.
