In a blender, combine frozen mango chunks, mango or orange juice, honey or sugar, ice cubes, and food coloring if using. Blend until completely smooth and creamy. Taste and adjust sweetness as needed. Pour the mango mixture into the bottoms of two tall clear glasses and place in the freezer for 5 minutes to set.

Rinse and dry the blender. Add frozen strawberries, strawberry juice or water, granulated sugar, ice cubes, and red food coloring if desired. Blend until the mixture is velvety and free of chunks. Carefully spoon or pour the strawberry blend over the mango layer, using the back of a spoon to keep layers defined. Return glasses to the freezer for 5 minutes.

Add vanilla ice cream, milk, vanilla syrup, and ice cubes to the blender. Blend until thick, white, and smooth. Spoon or gently pour the cream layer over the strawberry layer in each glass.

Top each drink with a generous swirl of whipped cream. Garnish with fresh mango and strawberry slices, and drizzle with mango or strawberry syrup. Serve immediately with a straw to highlight the sunrise layers.
