Set oven temperature to 400°F and prepare a baking sheet with parchment paper.

In a frying pan over medium heat, brown the ground beef while breaking it into small pieces. Add taco seasoning, diced green bell pepper, onion, tomato, and garlic. Cook until softened and combined, then remove from heat and allow to cool completely.

On a lightly floured surface, roll out the puff pastry sheets. Evenly spread the cooled beef mixture over the pastry, leaving a border around the edges. Sprinkle shredded cheese over the filling.

Starting from one edge, roll the pastry tightly into a log. Place it seam-side down and cut into 2.5 cm thick slices.

Arrange pinwheels on the prepared baking sheet, brush tops with beaten egg, and bake for 15 to 18 minutes until golden and crisp.
