Combine pancake mix, egg, whole milk, and vegetable oil in a medium mixing bowl. Stir until just blended with a few lumps remaining. Let rest 5 minutes for optimal consistency.

Break each graham cracker sheet in half to create squares. Layer a marshmallow and half a chocolate bar between two graham cracker squares and press gently to adhere.

Using tongs, dip each assembled s'more in prepared batter, turning to coat all sides evenly. Allow excess batter to drip off.

Heat vegetable oil in a deep pot to 375°F (190°C). Carefully lower each battered s'more into the oil, holding with tongs for a few seconds to set the batter. Fry in batches for 3–4 minutes until golden brown and crisp.

Remove fried s'mores with a slotted spoon and transfer to paper towels to drain excess oil. Let cool for 5–10 minutes before serving.
