It combines simple ingredients like cherry tomatoes, mozzarella, spinach, and a tangy Italian dressing to create a dish that is as pleasing to the eye as it is to the palate. This salad is a fantastic choice for holiday gatherings or anytime you want a bright and festive side dish.
I first made this salad for a family Christmas dinner and was amazed at how everyone kept going back for seconds. Now it’s a tradition we look forward to every year as a vibrant and tasty way to celebrate.
Ingredients
- 12 ounces rotini or penne pasta: using tri-color pasta adds to the festive appearance and ensures a fun texture
- 1 cup cherry tomatoes: halved for bursts of sweet and tangy flavor
- 1 cup baby spinach or chopped kale: for fresh greens and nutrients choose firm and vibrant leaves
- 1 cup mozzarella pearls or diced fresh mozzarella: provide creamy, mild richness
- ½ cup roasted red peppers: chopped for a smoky sweetness that complements the salad
- ¼ cup red onion: finely chopped adds a subtle sharpness and crunch select rosy, firm onions
- ¼ cup fresh basil: chopped imparts a fragrant herbal note use fresh bright leaves
- ½ cup black or green olives: sliced optional for a briny contrast
- Dressing: ¼ cup olive oil extra virgin recommended, 2 tablespoons red wine vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 garlic clove minced, Salt and pepper to taste
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook exactly according to the package directions ensuring it is al dente which means tender but still firm when bitten. Drain the pasta and rinse with cold water immediately to stop the cooking process and keep the pasta from becoming mushy. Set aside.
- Make the Dressing:
- In a small bowl or jar combine olive oil red wine vinegar Dijon mustard honey minced garlic salt and pepper. Whisk vigorously or shake until all ingredients emulsify into a smooth dressing. Taste and adjust seasoning if needed making sure the balance of tangy and sweet suits your palate.
- Assemble the Salad:
- In a large mixing bowl add the cooled pasta cherry tomatoes baby spinach or kale mozzarella roasted red peppers red onion and fresh basil. If you like add the sliced olives at this stage. Gently toss the ingredients together to distribute them evenly without crushing the delicate components.
- Add Dressing:
- Pour the prepared dressing over the salad and toss gently again. Make sure each bite will have a good coating of the dressing while maintaining the freshness and texture of the vegetables and cheese.
- Chill and Serve:
- Cover the salad with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to let flavors marry and intensify. When ready to serve garnish with more fresh basil leaves or a light dusting of Parmesan cheese for an extra touch of flavor and presentation elegance.
Mozzarella is my favorite ingredient here because its creamy coolness balances the brightness of the tomatoes and tang in the dressing perfectly. I remember one Christmas Eve when my niece declared this salad the best part of the meal and asked for extra servings which made me proud to share this vibrant dish with loved ones.
Storage tips
Store leftovers in an airtight container in the refrigerator and consume within 2 to 3 days for best freshness. The salad tastes even better the next day after resting but tends to absorb dressing so if you prefer the pasta firmer keep dressing separate and add just before serving.
Ingredient substitutions
You can swap baby spinach with kale for a more robust green or arugula for a peppery bite. Mozzarella pearls can be replaced with cubed feta cheese for a sharper saltier flavor. Use balsamic vinegar instead of red wine vinegar if you prefer a sweeter tanginess. Add diced salami or ham for a heartier version that works well for lunch or dinner.
Serving suggestions
Serve Christmas Pasta Salad chilled as a side with grilled chicken or roasted turkey. Pair it with warm crusty bread or add a sprinkle of toasted pine nuts or walnuts for extra crunch and nutty flavor.
Enjoy this festive pasta salad as part of your holiday spread for bright color and fresh flavor. It stores well and often tastes even better the next day.
