Lightly spray a 9-inch by 13-inch baking dish with non-stick spray. Transfer the Rice Krispies cereal into a large mixing bowl and set aside.

In a large saucepan over low heat, melt the unsalted butter. Add the mini marshmallows, pumpkin pie spice, vanilla extract, salt, and optional orange food coloring. Stir continuously until the marshmallows are fully melted and the mixture is smooth.

Remove the saucepan from heat. Immediately add the Rice Krispies cereal to the melted marshmallow mixture and stir thoroughly until all cereal is evenly coated.

Using a spatula lightly sprayed with non-stick spray, gently press the mixture into the prepared baking dish to create an even layer. Decorate with sprinkles if desired.

Allow the mixture to cool completely at room temperature before cutting into squares or using cookie cutters to create shapes. Store treats in an airtight container for up to one week.
