Lay tortillas flat on a clean surface and distribute the filling evenly over one half of each tortilla. Fold tortillas in half to enclose the filling, pressing gently to seal.

Heat olive oil in a large skillet over medium heat. Place one or two folded tortillas in the skillet and cook for 2 to 3 minutes per side, or until golden brown and cheese is melted. Transfer cooked quesadillas to a cutting board and repeat with remaining tortillas, adding more oil if necessary.
