In a large skillet over medium heat, cook the ground beef until browned and no longer pink, about 5 to 7 minutes. Break into small pieces as it cooks. Drain excess grease.

Reduce the heat to low and stir in 1 cup of marinara sauce with the cooked beef. Simmer for 2 to 3 minutes until heated through. Remove skillet from heat and set aside.

In a medium bowl, combine ricotta cheese, grated parmesan, and Italian seasoning. Stir until smooth and fully mixed.

Spread about 1/2 tablespoon of softened butter on one side of each sourdough slice.

On the unbuttered side of four bread slices, spread roughly 2 tablespoons of ricotta mixture. Layer with 1/3 cup beef mixture and top with 1/4 cup shredded mozzarella. Cover each with a remaining bread slice, buttered side facing outward.

Heat a large skillet over medium. Working in batches, place sandwiches buttered side down. Cook 3 to 4 minutes per side until bread is golden and cheese melts.

Serve grilled sandwiches hot with the remaining cup of marinara sauce for dipping.
