01 -
In a small food processor, pulse diced kiwis, sugar, and freshly squeezed lime juice until a coarse puree forms with visible fruit texture.
02 -
Transfer kiwi puree to a bowl or pitcher and stir in white rum. Start with 1/2 cup and increase to taste.
03 -
With a muddler or the back of a spoon, gently crush 1 cup blueberries in a bowl until juices are just released but not fully pureed.
04 -
Rub a wedge of fresh lime around the rims of serving glasses. Dip moistened rims into colored decorating sugar or sprinkles for a festive effect.
05 -
To a large pitcher, add half of the kiwi puree and some ice cubes. Layer in half of the mint leaves and a few kiwi slices if desired. Add additional ice, scatter in crushed blueberries, more mint leaves, and a handful of whole blueberries for color.
06 -
Pour chilled sparkling water over the fruit and mint mixture. Stir gently to combine. Taste and adjust with more rum, sparkling water, or sugar as desired. Pour into the decorated glasses, topping each with extra ice, whole blueberries, and a slice of kiwi for garnish.
