Preheat the oven to 350°F and line two cookie sheets with silicone mats or parchment paper.

In a large mixing bowl, stir all ingredients together until the dough is smooth and homogenous.

Using a small cookie scoop, place dough mounds onto the prepared sheets, spacing about 2 inches apart.

Optionally, lightly flatten each dough mound by pressing with a fork in a crisscross pattern.

Bake for 10 to 12 minutes until cookies are puffed and golden.

Allow cookies to cool on the baking sheets for 3 minutes, then transfer to a wire rack to cool completely; cookies will slightly deflate as they cool.
