Heat 1 tablespoon butter in a nonstick skillet over low heat. Crack in the eggs and cook until whites are set and yolks reach desired doneness, seasoning with salt and pepper. Transfer eggs to a plate.

Place one slice of bread butter-side down in a clean, nonstick skillet set over medium-low heat. Top with a slice of Colby Jack cheese.

Arrange two fried eggs over the Colby Jack, then place a slice of pepper jack cheese on top.

Place the second bread slice butter-side up to close the sandwich. Cover skillet with lid and cook until the bottom is golden brown.
