Preheat oven to 325°F. Combine graham cracker crumbs, melted butter, and sugar until mixture resembles wet sand. Press evenly into bottom of 9-inch springform pan and bake for 8 to 10 minutes. Let cool.

Beat cream cheese on medium speed until smooth, 2 to 3 minutes. Gradually add sugar and blend fully. Stir in sour cream until incorporated. Add eggs one at a time on low speed, scraping bowl between additions. Mix in vanilla and green gel food coloring until uniform color is achieved.

Pour filling onto cooled crust and smooth top. Tap pan gently to release air bubbles. Optionally, place pan in a larger pan filled with hot water for water bath. Bake at 325°F for 55 to 65 minutes, until edges are set and center slightly jiggles. Turn off oven and let cool inside for 1 hour.

Remove from oven and cool completely at room temperature. Refrigerate, covered, for at least 4 hours or overnight until fully set. Use black icing to pipe hair, stitches, and mouth. Attach candy melts for eyes and chocolate chips for pupils. Add additional decorative elements as desired.
