Place trimmed green beans into the slow cooker. Add vegetable broth, taco seasoning, smoked paprika, ground cumin, onion powder, black pepper, brown sugar, and minced garlic evenly over the beans. Add lemon zest and lemon juice for brightness.

Dot unsalted butter on top of the beans and toss thoroughly with tongs or clean hands to evenly coat green beans with broth, butter, and seasonings.

Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 2.5 hours until green beans are tender but not mushy. Toss the beans once or twice during cooking to ensure even flavor distribution.
