Cut brioche loaf into thick slices approximately 1 to 1.5 inches.

In a large bowl, whisk eggs, heavy cream, whole milk, granulated sugar, vanilla extract, cinnamon, and salt until homogenized.

Arrange brioche slices evenly in a 9×13 inch baking dish. Pour custard mixture over bread and allow to soak for minimum 30 minutes.

Heat oven to 350°F (175°C).

Cover baking dish with foil and bake for 30 minutes.

Remove foil and continue baking for an additional 15 to 20 minutes until set and lightly browned.

Sprinkle brown sugar evenly atop baked custard and caramelize using a kitchen torch or broiler until golden and crisp.
