Wash and dry the strawberries thoroughly. Hull each strawberry by removing the leafy top, then slice off the pointed tip to create a flat surface for the Santa hat, separating into a larger bottom portion and a smaller pointed top. Set aside.

In a chilled bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat with a hand or stand mixer until stiff peaks form, taking care not to overwhip.

Transfer whipped cream into a piping bag fitted with a round or star tip. Pipe a generous swirl onto the flat surface of the larger strawberry piece to form Santa's fluffy body and beard.

Place the smaller strawberry tip on top of the whipped cream swirl, pressing gently to secure without flattening the cream. Add a small dollop of whipped cream at the top to create Santa’s pom-pom.

Press mini chocolate chips gently into the whipped cream for eyes. Optionally, add red and green sprinkles down the front to represent buttons.

Lightly sift powdered sugar over the completed Santas for a festive snowy effect. Arrange for serving.
