Label and arrange two medium heatproof bowls. Assign one for red gelatin mixture and the other for green gelatin mixture.

Pour 1/2 cup boiling water into each bowl over the corresponding gelatin powder. Stir with a whisk until completely dissolved and smooth.

Whilst the gelatin mixture is still hot, stir one cup of mini marshmallows into each bowl. Allow marshmallows to soften and float without fully melting.

Cover both bowls and refrigerate for 1 to 1.5 hours, monitoring after 45 minutes. Mixtures should thicken to a scoopable, not fully set, consistency.

Scoop portions of each mixture and roll between palms into smooth, 1-inch diameter balls. Lightly dust hands with powdered sugar or coconut if mixture is sticky.

Roll each gelatin ball in shredded coconut until fully coated. Optionally, use sprinkles, colored sanding sugar, or crushed candy canes for varied textures and festive appearance.

Arrange coated balls on parchment-lined tray and refrigerate for 30 to 45 minutes to firm before serving.
