Line an 8×8-inch baking pan with parchment paper and lightly grease it.

In a medium saucepan, combine granulated sugar, light corn syrup, and water. Stir over medium heat until the sugar dissolves.

Increase heat and cook without stirring until the mixture reaches the hard-crack stage at 300°F on a candy thermometer.

Remove the syrup from heat. Quickly stir in vanilla extract and black gel food coloring until evenly colored.

In a separate bowl, beat the egg white with cream of tartar and salt until stiff peaks form.

Slowly pour the hot syrup into the whipped egg white while mixing continuously on low speed. The mixture will puff up and resemble coal.

Immediately pour the mixture into the prepared pan. Let cool for 30 minutes, then break into chunks to simulate coal pieces.
