01 -
Preheat oven to 400°F. Slice tops off garlic heads to expose cloves; drizzle with olive oil and sprinkle salt. Wrap tightly in foil and roast for 40-45 minutes until caramelized. Let cool, then squeeze cloves from skins and mash into paste.
02 -
Combine softened butter, 1 tablespoon roasted garlic paste, chopped parsley, salt, and black pepper in a bowl. Whip until smooth and thoroughly mixed.
03 -
Slice Pan Sobao lengthwise into two large halves. Evenly spread garlic butter mixture over cut surfaces to cover fully.
04 -
Sprinkle shredded mozzarella and Monterey Jack evenly over buttered bread, then dust with grated Parmesan to finish.
05 -
Place bread halves on baking sheet, cheese side up. Bake at 400°F for 12-15 minutes until cheese bubbles and edges are golden. Optionally broil for 1 minute, monitoring to avoid burning.
06 -
Remove from oven, allow to cool briefly, and sprinkle with additional parsley if desired. Slice into strips or squares and serve warm.
