Unroll thawed phyllo dough and cover with a barely damp towel to prevent drying out.

Melt unsalted butter in a small bowl and have a pastry brush ready.

Lay one phyllo sheet on your work surface and brush generously with melted butter. Repeat placing sheets at a slight angle, brushing each with butter until all six sheets are stacked.

Place Brie wheel in the center of the stacked phyllo. Drizzle 2 tablespoons honey over the Brie. Gently fold phyllo edges up, pleating to form a neat parcel. Brush entire exterior with melted butter.

Transfer parcel seam side up to a parchment-lined baking sheet. Bake in a 375°F (190°C) oven for 25 to 30 minutes until phyllo is golden brown and crisp.

Remove from oven and let rest 5 to 10 minutes to set slightly. Transfer to serving platter and drizzle reserved 2 tablespoons honey over the top before serving.
